Mexican Skillet

Today, I thought I would share a recipe with my readers. The recipe comes from my husbands stepmother. Every summer, our kids go to Colorado to spend two weeks with them and last year, she made this meal. My son LOVED it!! In fact, I was told he loved it so much, he had 3 or 4 helpings of it! When they came home, he made me call her to get the recipe so I could make it for him! So, here it is...Mexican Skillet

2 cups uncooked macaroni noodles
8 oz salsa
1 cup frozen corn
1 lb hamburger
1 can of mexican style tomatoes
1/2 an onion
1/2 each red and green peppers
1 Tbsp garlic
cheese
green onions (optional)
sour cream (optional)
Fritos (optional)

Start by dicing the onion and peppers. You will need to have them ready before you start cooking the hamburger. Cook the macaroni as directed on the package.
Brown hamburger in a large skillet pan. Add diced onion, peppers and the garlic as the hamburger is cooking so they become soft. When the hamburger is browned, add the salsa, tomatoes, and corn. Continue to cook until the corn is cooked through. Add the cooked macaroni and stir together.  Top it off with the cheese and let it melt before serving. Add sliced green onions and sour cream if desired, and serve with Fritos.

This is such a quick and easy meal and better yet, it is very filling! I made this meal a couple of days ago and I meant to take a picture before we dug in, but I was too slow...Sorry!!

Why is it that.....

As my son and I left the gym tonight, we were trying to figure out what we would have for dinner. I told him that I wasn't very hungry and that I wanted a salad or some veggies. He said that sounded good to him too. I was so proud of him for making that choice instead of fast food which is so much faster and less work on my part. So, we get to the store and I tell him that I want to stick to my budget. (We are trying to get some bills paid off so I am very strick on spending lately) So, he picked out 3 of the things he wanted; Carrots, Sugar Snap Peas, and some apples. Just those 3 items came to $8.00. That was before I had anything picked out, plus I had to get my husband and daughter dinner as well. I started thinking that it would actually be cheaper to go across the street to Wendy's and get food from the dollar menu. I mean seriously, I could feed about three of us on $8.00 there.

You hear all these people talking about how the US has the most obese people in the world. Why is it so inexpensive to eat the junk food and if you actually want to eat a healthy meal, you practically have to get a loan? It just doesn't make sense to me!!

My Homemade Breakfast Scramble

Ok, so any of you that know me also know that I am NOT the best cook in the world!!  Every now and then though I surprise myself and actually make something worth eating!! Last night, I told my husband that omlettes sounded really good for dinner. (He makes really good omlettes....I don't) He said "Oh, they do, but I won't be home to make them for you. Then he said as he walked out the door, "Be sure to save some dinner for me."  So, I decided that I would attempt a Skillet Scramble. I cut up some onions, green peppers, garlic, and mushrooms and sauteed them in butter, then added some hashbrowns and then mixed in some eggs and some bacon I fried up when the potatoes were cooked through. It looked and smelled SO good. I had to take a picture!

Travis did get to have some of this for lunch today, but we had to make more. There was about a half a cup left after we ate. I got an email from him today saying that it was awesome!!! That doesn't happen very often in my house, so I have to brag about it when it does!!
